Maple Pumpkin Fall Harvest Trail Mix
This Maple Pumpkin Fall Harvest Trail Mix is the perfect afternoon snack.
- 1/4 cup maple syrup
- 1 1/2 tsp pumpkin pie spice
- 1/8 tsp sea salt
- 2/3 cup pecan halves
- 2/3 cup walnuts
- 1/3 cup roasted pumpkin seeds
- 1/3 cup sunflower seeds
- 1/3 cup sliced almonds
- 1/3 cup dried cherries
- 1/3 cup dried apricots
- 1/4 cup raisins
- Cookie sheet
- Parchment paper
- Large saucepan
Line the cookie sheet with parchment paper. Set aside.
Using a large saucepan on medium high heat add the maple syrup. Cook until it begins to boil. Add the pumpkin pie spice and salt. Stir well.
Slowly add the nuts, stirring to incorporate them into the mixture. Continue to cook for about 3-5 minutes, the syrup will have reduced and make sure the nuts have caramelized.
Carefully spread the mixture in a even layer on the lined cookie sheet. Set aside to cool completely. The nuts will become hard as they cool. Set aside.
Check to make sure that the nuts have hardened. If so then begin to add the cherries, apricots, raisins. Stir well until the ingredients are well blended.
Break the candied nuts into clusters. Enjoy as soon as done or store the leftovers in an air-tight containers.
