Apple Pie Layer Cake

This Apple Pie Layer cake is packed with fresh apple chunks, covered in a cinnamon buttercream, and sprinkled with some irresistible walnut crumble.  This is definitely a showstopper cake.

This particular cake does have a few elements going on, with the main cake of course, buttercream, apple pie filling, pie crust and the walnut crumble. But you don’t have to do it all if you feel like it’s too much. You can easily buy apple pie filling from the store and use cake mix! I will pretty much always advise you to make frosting from scratch because it takes like, two minutes, tastes way better, and it behaves SO differently than store-bought frosting for decorating! If you want your cake turning out beautiful, just make the frosting yourself.

Ingredients

Cinnamon Sugar Cake:

  • 3 C flour
  • 3 tsp baking soda
  • 1 tsp kosher salt
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1 C unsalted sweet cream butter softened
  • 1 C sugar
  • 1 C light brown sugar
  • 4 large eggs
  • 2 tsp pure vanilla extract
  • 1 1/2 C buttermilk

Apple Filling:

  • 5 Large granny smith apples peeled and chopped
  • 4 tsp lemon juice
  • 1/2 C sugar
  • 1/2 C light brown sugar
  • 4 tbsp cornstarch
  • 1 tsp ground cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp kosher salt
  • 2 C water

Pie Crust:

  • 2 – 9 in round store bought pie crust
  • 2 large eggs lightly beaten
  • Cinnamon Frosting
  • 3 c unsalted sweet cream butter softened
  • 6 C powder sugar
  • 2 tbsp ground cinnamon
  • 3-6 tbsp heavy whipping cream
  • 1 large piping bag with a round tip

Walnut Crumble:

  • 3/4 C flour
  • 1/2 C oatmeal
  • 1/2 C chopped walnuts
  • 1/2 tsp baking soda
  • 1/2 tsp kosher salt
  • 1/2 tsp cinnamon
  • 1/2 C unsalted sweet cream butter cold
  • 1/2 C light brown sugar

Instructions

Cinnamon Sugar Cake:

  1. Preheat oven to 350 degrees and spray the cake pans with pam baking spray
  2. Using a large bowl, whisk together the flour, baking powder, salt, cinnamon, nutmeg and cloves until combined
  3. Using a standing mixer, beat together the butter, sugar. and brown sugar until light and fluffy
  4. Beat in the eggs, 1 at a time until combined before adding the second egg
  5. Alternating between the flour and the buttermilk mix until combined after each portion
  6. Divide the batter between the 3 pans and bake in the oven for 30 minutes or until a toothpick comes out clean
  7. Allow to cool completely on the counter

Apple Pie Filling:

  1. In a large bowl, toss together the lemon juice and chopped apples
  2. In a large pot, combine the sugar, brown sugar, cornstarch, cinnamon, nutmeg and salt
  3. Add water and bring to a slow boil
  4. Once water is boiling, add in the apples and bring back to a boil for about 10 minutes
  5. Remove pot from stove and allow to cool completely
  6. The sauce will start to thicken as it cools

Pie Layer:

  1. Line a cookie sheet with parchment paper
  2. Place the pie crust onto the cookie sheet and brush with the egg mixture
  3. Bake in the oven for 15 minutes until golden brown
  4. Allow to cool completely

Walnut Crumble:

  1. Preheat oven to 350 degrees and line a cookie sheet with parchment paper
  2. In a medium bowl, whisk together the flour, oats, walnuts, baking powder, salt and cinnamon until combined
  3. Cut the butter into cubes and place into the flour ingredients
  4. Using your fingers, make the crumble
  5. Pour crumble onto the cookie
  6. Bake in the oven for 8 minutes and the remove the cookie sheet and mix the crumble
  7. Bake again in the oven for another 8 minutes before removing and allowing to cool completely

Cinnamon Frosting:

  1. Using a standing mixer, beat together all ingredients until combined, fluffy and smooth with stiff peaks. Beat for about 5-7 minutes
  2. Add more powder sugar if you think your frosting is to soft
  3. Scoop about 2 C of the frosting into the piping bag and set aside

Decorating the cake:

  1. Place a 10 inch round cake board onto a cake stand
  2. Place 1 layer of cake onto the cake board
  3. Scoop about 1 C of frosting onto the cake layer
  4. Place a layer of the pie crust onto the frosting
  5. Pipe two large rings around the pie crust
  6. Fill in the middle with 3/4 C of the apple filling
  7. Place another cake layer on top
  8. Repeat the steps with the second pie crust
  9. Place the third layer of cake on top of the second layer of apple filling
  10. Using the remaining frosting, frost entire cake
  11. Use your hands to break up the crumble
  12. Coat the bottom and the top in the crumble
  13. Place cake in the fridge to allow the frosting to harden up
  14. Cut into slices and enjoy!
