Peach Blondies

  • 1/2 C fresh peaches, peeled and diced
  • 3/4 C unsalted sweet cream butter, softened 
  • 1/2 C sugar
  • 1 C light brown sugar, packed
  • 2 large eggs
  • 2 tsp pure vanilla extract 
  • 2 C flour
  • 1 tsp baking powder
  • 1/2 tsp kosher salt
  • 1 tsp ground cinnamon 

Cinnamon Frosting ingredients 

  • 1 C unsalted sweet cream butter, softened 
  • 1 tbsp ground cinnamon 
  • 3 C powder sugar 
  • 3-5 tbsp heavy whipping cream 
  • 2 tsp pure vanilla extract 
  • 1 C chopped walnuts


  1. Preheat oven to 350 degrees and line a 9×13 baking pan with parchment paper

  2. In a large bowl, whisk together the flour, baking powder, salt and ground cinnamon until combined

  3. Using a standing mixer, cream together the butter, sugar, and brown sugar until light and fluffy

  4. Beat in the eggs, one at a time until well combined

  5. Beat in the vanilla extract 

  6. Gradually beat in the dry ingredients until combined 

  7. Fold in the diced peaches

  8. Spoon batter into baking dish and spread evenly

  9. Bake in the oven for 25-35 minutes or until lightly golden brown 

Directions to make Frosting

  1. Using a standing mixer, cream together all ingredients until combined and smooth and stiff peaks form. About 3-5 minutes

  2. Once frosting is made, spread evenly over the top of the bars

  3. Sprinkle chopped walnuts on top
