Lemon Filled Cookies

These lemon filled cookies are full of great lemon flavor!
If you are a lemon lover, then you are going to absolutely LOVE these cookies.
They are perfectly chewy and they have just the right amount of delicious lemony flavor. I love lemon filled oreos, I put crushed up lemon oreos in this cookie. The white chocolate chips add just the right touch
but if you prefer your cookies plain you can totally leave them out.

I just know you are going to enjoy these cookies. You can’t stop with just one.

Lemon Filled Cookies

These lemon filled cookies are full of flavor and so simple to bake!

Ingredients

  • 1 1/2 C flour
  • 1 tsp baking soda
  • 1/4 tsp kosher salt
  • 1/2 C unsalted sweet cream butter, softened
  • 1/2 C light brown sugar packed
  • 1/4 C sugar
  • 1 large egg
  • 1 tsp vanilla extract 
  • 3/4 C white chocolate chips 
  • 1 package of lemon Oreo cookie, 18 cookies chopped and 18 cookies finely crushed
  • Lemon Frosting container 

Instructions

  1. Preheat oven to 350

  2. Line two baking sheets with parchment paper.

  3. In a small bowl combine flour, baking soda and salt. Set aside.

  4. In a standing mixer, beat together the butter and sugars until combined and fluffy

  5. Beat in the egg, and vanilla

  6. Gradually beat in the dry ingredients until combined

  7. Fold in 3/4 C white chocolate chips, 1/2 of the chopped oreos and 1/2 of the crushed oreos

  8. Using a medium ice cream scooper, scoop cookie dough into hands and roll into a ball

  9. Combine white chocolate chips, chopped oreos and crushed oreos into a bowl and mix until combined

  10. Roll cookie dough into the mixture and place onto the cookie sheet

  11. Lightly press down onto the cookies into a thick disk

  12. Repeat steps with remaining dough

  13. Bake in the oven 1 tray at a time for about 10-12 minutes or until lightly golden brown

  14. Remove film from the frosting and place into microwave for 30 seconds 

  15. Mix with a spoon until soft and smooth 

  16. Place back into the microwave for 20 seconds and mix again

  17. Using the flavor injector, place the needle into the frosting and pull the knob up to suck in some frosting

  18. Poke the side of the cookie and inject frosting into the cookie until the top cracks

  19. Repeat step on all cookies
