Apple Spice Leaf Cookie

I just love decorated cookies. These cute cookies are shaped likes fall leaves and taste like Apple Spice. The fall leaves are beautiful here in Virginia where I live. I love going over to the Appalachian Mountains this time of year and taking a hike. The colors you see are just mesmerizing.

These Apple Spice Leaf Cookies are very simple to make and you can use a simple round cookie cutter if you’re short on time, then just decorate with different colored icing.

Apple Spice Fall Leaf Cookie

Ingredients

  • 2 C unsalted sweet cream butter softened
  • 1 C sugar
  • 1 C light brown sugar
  • 1/4 C pumpkin puree
  • 2 large eggs
  • 1 tsp vanilla
  • 2 tsp cinnamon
  • 1 tsp apple pie spice
  • 5 C flour + 2 C to roll the dough
  • 1 tsp salt
  • Cookie Cutter: Variety of leaf cookie cutters

Icing ingredients:

  • 4 egg whites
  • 1/2 tsp cream of tarter
  • 1/2 tsp vanilla
  • 4 1/2 C powder sugar
  • Orange Brown, pink, black and golden yellow gel food coloring
  • 5 disposable piping bags fitted with a number 2 tip
  • 3 squeeze bottles

Instructions

  1. Preheat oven to 350 degrees and line 2 cookie sheets with parchment paper
  2. Using a standing mixer, cream the butter and 2 sugars together
  3. Add pumpkin purée and eggs while slowly mixing.
  4. Add vanilla extract and mix.
  5. In a large bowl, mix together the 5 cups of flour apple pie spice and salt until combined
  6. Gradually mix in the dry ingredients until combined
  7. Scoop dough out onto a floured surface
  8. Knead in 1/2 C of flour
  9. Roll out dough to 1/8 inch in thickness
  10. Cut out shapes and place onto cookie sheet 2 inches apart
  11. Place cookie sheet into the oven and bake for about 8-10 minutes
  12. Remove from oven and allow to cool completely

Royal Icing Directions:

  1. Using the standing mixer, combine the egg whites, cream of tarter, vanilla and powder sugar and mix until combined and stiff peaks form
  2. Split icing into 5 bowls
  3. Add a few drops of Orange into one of the bowls
  4. Add a few drops of brown into the second bowl
  5. Add a few drops of golden yellow into the third bowl
  6. Add a few drops of pink into the fourth bowl
  7. Add a few drops of black into the fifth bowl
  8. Mix until the colors are blended and the shades you want
  9. Scoop about 1/4 C of icing into their own bags
  10. Add 2-4 tsp of water into the remaining brown, orange and yellow icing bowls and mix until combined
  11. Pour the icing's into squeeze bottles
  12. Outline the leaf cookies like shown in the sample image
  13. Fill in the cookies with the thinned icing colors
  14. Allow to dry completely over night
  15. Using the black piping bag, pipe the details of the faces onto the cookies
  16. Using the pink icing, pipe pink dots for the cheeks
  17. Allow to dry for one hour before enjoying!
