Back to School Cupcakes

I can’t believe it’s Back to School time already. School starts here August 8th. This whole summer just went by too quickly. For a lunch box treat, I’m making these back to school cupcakes. They have a cute little fondant topper and apple decoration on top. The kids are going to love them and make their day a little brighter.


Back to School Cupcakes

  • 1 box of white cake mix any brand
  • 3 egg whites
  • 1/2 C. oil
  • 1 C. water
  • White frosting
  • White cupcake liners
  • White fondant
  • Rolling pin
  • Apple Icing Decorations optional but super cute. *See Note Below*
  • Wilton Edible Markers
  • Ruler
  • 2.75 " round cookie/biscuit cutters


  1. Preheat the oven to 350 degrees and line a 12-count muffin tin with cupcake liners.
  2. Combine the cake mix, eggs, oil and water. Fill each muffin cup about 2/3 full.
  3. Bake 18-20 minutes.
  4. Insert a toothpick around 18 minutes and it comes out clean, the cupcakes are done.
  5. Remove from the oven and let cool prior to decorating.
  6. Take a small handful of white fondant and gently roll out using a rolling pin. If the fondant sticks, use a little bit of powdered sugar or cornstarch to help make it easier to work with.
  7. Once the fondant is rolled to about 1/4" thick, use the 2.75" round cookie cutter to cut the fondant - repeat this process for 24 cupcakes.
  8. Once you have all the fondant toppers ready, use the ruler and a red edible marker to make the first red line down the side of the fondant.
  9. Next, use the blue edible marker to make three paper lines across the fondant in the opposite direction so it looks like paper.
  10. Repeat this process with all the fondant toppers.
  11. Generously frost each cupcake and place the fondant on top of each cupcake.
  12. Place a small amount of frosting on the back of the apple icing and place on top of the fondant.
  13. Repeat with all cupcakes.

Recipe Notes

*Apple Decorations can be made with a little red fondant and a very small amount of green fondant, if you can't find premade apple decorations in the store. 

*If you don't have time to make your own cupcakes you can always go to your local bakery and pick up 24 cupcakes. Just take off most of the icing and start with the fondant directions.
