Peanut Butter and Jelly Cupcakes

Peanut Butter and Jelly Sandwiches are every child’s favorite lunchtime choice. This sweet treat will be the hit of your next event. Serve with a glass of milk and enjoy!

Peanut Butter and Jelly Cupcakes

Ingredients

  • Cake mix + ingredients needed to prepare it
  • ¼ cup your choice of strawberry or grape jam
  • Peanuts for garnishing

Frosting:

  • 2 sticks butter softened
  • 1 cup smooth peanut butter
  • 7 to 8 cups powdered sugar
  • 4-6 tbsp milk

Instructions

  1. Prepare cupcakes according to the box’s directions. Allow to cool on a rack (note: cupcakes must be cool before decorating).
  2. Carve out a small hole in the top center of your cupcake (don’t throw it out). Fill the whole with jam and top it with the cut-out portion of your cupcake.

Frosting:

  1. Using an electric mixer, mix butter, peanut butter, and powdered sugar until well combined. Add milk and continue mixing until buttercream forms stiff peaks.
  2. Using a piping bag, frost each cupcake and garnish with some peanuts (I use salted ones for the sweet and salty mix!)
