Green Velvet Cupcakes

Haven’t found your four-leaf clover yet? Maybe these cupcakes will do the trick! I opted for green velvet to celebrate the lucky holiday!

This year, I wanted to go all out for my St. Patrick’s Day sweet table. Of course, I only saw green and so these Green Velvet Cupcakes will make for the perfect centerpiece. The best part: vanilla buttercream garnished with golden sprinkles. I’m feeling lucky already!

I know as a part of our celebrations, we’ll be attending our local St. Patrick’s Day parade. I’ll be dressed head-to-toe in green (and perhaps I’ll bring along a cupcake – just for some sweet luck!).




Green Velvet Cupcakes

  • 2.5 cups all-purpose flour
  • 2 tbsp cocoa
  • 1 tbsp baking soda
  • ½ tsp salt
  • 1.5 cups granulated sugar
  • 2 eggs
  • 1 vanilla bean
  • 1 cup oil
  • 1 tbsp vinegar
  • 1 cup buttermilk
  • Green gel food coloring
  • Ready-made frosting
  • Gold sprinkles


  1. Line a muffin tin with papers and preheat oven to 350 degrees F.
  2. In a large bowl, sift together flour, cocoa, baking soda, and salt. Set aside.
  3. Using an electric mixer, start mixing sugar and eggs until creamy. Slice vanilla bean and scrape for the inner content – add to your egg and sugar mixture. Continue mixing.
  4. Add oil, vinegar, and buttermilk. Once your wet ingredients have thoroughly combined, slowly add your bowl of dry ingredients (I like to add it in thirds).
  5. Once mixed, add 1 to 2 tsp of green gel food coloring. Your batter should come out a very rich emerald.
  6. Fill your muffin tin with the cupcake batter about ¾ in each cup. Bake for 15-18 minutes or until the cupcakes have passed the “toothpick test.”
  7. Allow your cupcakes to fully cool. Using a piping bag, frost each cupcake and add gold sprinkles. Enjoy your lucky cupcakes!
